Disney Cruise Inspired Banana Bread
This recipe is adapted from magicalrecipes.net and is inspired by the Banana Bread served at Disney Wonder's Parrot Cay (now Tiana's Place!)

Serves: (1) 8"x8" pan
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • ½ teaspoon baking powder
  • ⅛ teaspoon salt
  • 2 large eggs
  • 1 cup sugar
  • 1½ cup mashed bananas (about 3 ripe bananas)
  • ½ cup vegetable or canola oil
  • ¼ cup milk
  • ½ teaspoon ground cinnamon
  • 1 teaspoon vanilla extract
  1. Preheat the oven to 350 degrees F. Grease a 9 x 5 inch loaf pan or an 8 x 8 square baking pan.
  2. Whisk together flour, baking soda, baking powder and salt in a medium bowl and set aside.
  3. Stir together together the eggs and sugar in a large bowl. Stir in the mashed bananas, oil, milk, cinnamon and vanilla. Mix until all combined.
  4. Add in the flour mixture and stir just until combined. It will still be lumpy - don't overmix or the bread will be tough and chewy.
  5. Pour the batter into prepared pan. Bake for about 1 hour.
  6. Let cool completely before slicing.
